Recipe: Garlic and Lemon Spinach

SpinachOlive oil spray
2 cloves garlic, minced
8 oz. fresh spinach, severely wilted parts and bottoms of stems removed
2 tbsp. fresh lemon juice (juice from about ½ lemon)
1 tbsp. fresh lemon zest, plus more for garnish (zest of about 1 lemon)
¼ tsp. sea salt

Heat a large pan over high heat for one minute. Remove pan from heat momentarily to spray with olive oil spray. Put pan back on heat, reduce to medium high, and add minced garlic. Sauté for one minute, stirring frequently. Then add spinach, lemon juice, and lemon zest. Continue to sauté, stirring frequently, for about three to four minutes or until just wilted and cooked. Season with sea salt and serve immediately. Garnish with extra lemon zest.

Makes 2½-cup servings. Each serving contains about 36 calories, 1 g fat, 0 g saturated fat, 0 g trans fat, 0 mg cholesterol, 380 mg sodium, 6 g carbohydrates, 1 g sugar, 3 g fiber, and 3 g protein.
